1 WEEK CULINARY CAMP SESSIONS

The Kids Culinary Camp is intense fun for residential campers offered in One ,Two and Three week sessions, running June through August starting Sundays and ending on Saturdays. Our Program consist of 2 segments. The Saute Kitchen and our all new Baking & Pasrty Arts program. For each session, Campers arrive between noon and 2 PM on the Sunday beginning their Session. Each day during the week, Campers explore a different area of Culinary Arts. The Friday evening before graduation, Campers attend and participate in a Culinary Karaoke evening of fun and prizes. On Saturday, parents, friends and family arrive at 11:45am for a Graduation Ceremony and a luncheon prepared by Campers. Campers are dismissed at 1:30pm Saturday. Each day of the one week session new culinary skills are introduced. They include:

- Garnishes

- Cake Decorating

TWO WEEK SESSION CULINARY ARTS

Culinary Instruction will consist of the following: Students who attend a 2 week session or any 2 consecutive one week sessions will have exposure to all of the one week instruction with the addition of: Crock Pot Cookery, Canning & Preserving, Exploring Ethnic Foods to include Italian, South American, German & Japanese Cuisine.
Advanced Cake Decorating, Prepare Fresh Ice Cream, Advanced Entrees, Catered Event by Student culinary campers Bee Keeping & Aquaponics

THREE WEEK SESSION CULINARY ARTS

Culinary Instruction will consist of the following: Students who attend a 2 week session then add on another one week or any 3 consecutive one week sessions will have exposure to all of the 2 week instruction with the addition of:
Each student will have the opportunity to Milk our own Jersey Cow “Elsie” here at the Academy and the students will be Cheese Making to include Cheddar, Mozzarella, Feta and Cheese Curds. Make Fresh Butter & Yogurt with Cream from our “Elsie” Organic Square Foot Gardening & Composting Menu Planning and Culinary Competition between students Bottling of Herbed Virgin Olive Oils, Homemade Vermont Root Beer & Orange Crush Fresh Seafood Cookery, Advanced Garde Manger, Advanced Desserts, Classic French Dishes, Soufflés, Advanced Breakfast and Brunch Cookery

Culinary Instruction will consist of the following:
This intensive Camp is designed for the young student who is considering a career in Culinary Arts. Students must register for at least 4 or more weeks of Culinary Camp. Students will participate in all of the curriculum received during any 3 week session with focus on careers in Culinary Arts. Students will have to complete a design for a business; modeling menu, layout, start up cost, staffing etc. How to set up inventories, maintain stock levels, proper handling of food.
Students will attend a training seminar on food safety and sanitation. This is given by the Department of Health of the State of Vermont. After successful completion, a Food Safety Certificate is issued by the National Restaurant Association.
Students will participate in working side by side with Chef Kelly at his restaurant for at least 8 hours during the session. There learning the hustle and bustle of a real live restaurant. Also 8 hours working in the dining room to learn proper table service and customer service.
Each Student will plan a 5 course dinner and in the form of a live cooking demonstration produce a meal for 12 guest. A visit to the 1980 Winter Olympic Center in Lake Placid New York.
Students will have an intensive on table side cookery and flambé desserts. Different International styles of table service. Buffet Planning and Design, Decoration using Edible Flowers and a Ice Carving Hands on Demonstration. After successful completion on this intensive Culinary Camp, The Kids Culinary Academy will give recommendations to future employers and Culinary Colleges.
